Very lean... bloody taste even cooked well done. Can be tough if not prepared right. Excellent for burgers. Lots of fat!
The continental market where I live sells alligator and kangaroo burgers.
I actually am trying to raise a few, and let me tell you... these things are bat-shit crazy.I am surprised the meat isn't like chewing on a boot.
