Raw Milk is not as nutritious as Ultra Pasteurized or Pasteurized Milk.
Wait a minute, what? Are you talking about fortification? I thought a lot of beneficial enzymes like lactase were destroyed by pasteurization. I'd drink raw milk if I could be assured it was TB free.
Scalding the milk is still something you might want to do for bread baking since intact protein chains will inhibit gluten formation but you'd want unscalded milk for other applications, wouldn't you? Honestly, I never bother either way. UHT pasteurized milk probably doesn't need it but if your milk was refrigerated in the store, rather than on an unrefrigerated shelf, then it was probably HTST pasteurized.
UHT milk tastes weird to me tho. I never buy it.
