I have a big barrel smoker, and was wondering if there is anything bad in smoking such as whole chickens, turkeys, fish, and sometimes a pork loin. Things like brisket, ribs, and boston butt(pulled pork) are great things to eat for a cheat meal or for the holidays. I take the skin off, of course, but its just that the whole plain grilling, steaming, and baking(and once in a while sauteeing with veggies) gets boring real fast.
I cook with hardwood or straight up mahogony(have 2 of them in my yard that constantly need trimming), btw.
In short...smoking meat...yea or nay?
