Now closing in on 30 years, I see the error of my ways. The past ten years of my kindness have been mistook for weakness,

Hey TA, I made burgers tonight following that video you posted.  80/20 fresh ground chuck, sliced some onions on the mandolin.  Wad of beef, onions, smash, kosher salt, cracked pepper.  Best damn burger ever.  I've always pattied my burgers, and now i realize the errors of my way.  Thanks for the tip.

No problem my friend.  Make sure you don`t touch the meat with your hands.  Also, next time do this: Dump the meat out from the package on a baking sheet with parchment paper, and with plastic wrap, LOOSELY push the meat together to form a LOOSELY held patty. You want it REALLY thin to form the best Salty Crust Possible.   Then place these on a baking sheet and then into the Freezer for 15 to 20 minutes.  Take them out after 15-20 ONLY after your skillet is heated high and read to go. Salt and Pepper and Fry, flip after about 12 minutes and cook the other side.

I took the beef out of the pack, and broke it up a little, and then lightly made a wad.  Threw it in the pan, and took a wad of onions, and mashed them in the center, and then smashed with the spatula.  Worked great, thanks again.
