True, it does work for building muscle. But those results aren't mindblowing. I'd rather see myself get bigger and stronger simulataneously.

The fact is I'm weaker then I was before I started HIT. I'd never have done HIT if I knew that would happen, even with the added size!

Well, you posted it as if to verify that Adam's "principles" were proven correct because some fat guy was eating chicken and broccoli. What you didn't look into is that Mits shoots BB's all day, every day and helps them out preparing food. Thus, it's likely that the food is for the huge, ripped bodybuilder that he is working with, not himself...effectively disproving Adam's "principles".
