I'm not sure how long they give you to eat it, but:

Small steak, a couple of ribs, and a couple of pepperoni slices. For a drink, a nice cold bottle of Coke.

my ex gf's spaghetti sauce- no pasta, just the sauce w a loaf of fresh homemade bread and butter.

a boneless chicken roti with hot sauce.

a few slices of pizza hut supreme 'the edge' pizza.

homemade cherry cheesecake.

Actually you just about nailed it but throw in some sushi and perhaps a bottle of whiskey to mix with the Coke and lots of ice.

The risk of it being bad is low, rarely had bad sushi.

One or more members of the legislature have maneuvered to put restrictions on this after one condemned inmate ordered a crazy long menu of food that was deemed extravagant and wasteful (in this economic climate). One of the restrictions is that the last meal must be made from items readily available in the prison kitchen. No special order foods, ingredients, or cooking tools.

Personally, I do not believe they should get any special last meal; what is the purpose of this? Of course, I don't believe in putting people to death either.
