I use Hodgson Mill Rice Flour (Gluten Free). Hammer out round steak really thin, dip it in egg/milk, bread it in flour and fry it.

Actually, you'd probably have better results dredging in flour first, then egg, then flour again and let it sit for a few minutes before frying. Forget the breading.

Ever hear of a scottish egg? Boil an egg until it is half hard, just hard enough to peel. Then dredge in panko bread crumbs and deep fry. So fucking good.
