After the war, Grandpa kept in touch with an Italian-American who also served in the 82nd an they wrote letters back and forth for years. Well anyways, Vinnie went back to New York after the war and took the knowledge of how to make a Neapolitan style pizza back with him and started Vincenzo`s Pizzeria. He credited Grandpa with the recipe because when they were together at Guadalcanal, Grandpa found some Parmesan cheese that was left over in a Japanese encampment and decided to share it with Vinnie.
They didn`t have much time to eat it as they were still in enemy territory. So Grandpa and Vinnie took a chunk and each started nibbling on a side until they got to the middle and their noses were touching. Grandpa, always looking out for others, told Vinnie to take the remaining part of cheese. He did. All the way back to New York where he developed the now famous Vincenzo`s Parmesan which was inspired by that piece of cheese they shared at Guadalcanal.
