I prefer steaks medium rare generally, but will take rare at an actual, proper steakhouse. I don't think I could ever do blue-rare and wouldn't eat anything over medium.

When I order a steak and they ask how do you want it my answer is always cold. They always have me repeat it. Like you I always have a hard time getting them to have the balls to cook it like I want it. I rarely send it back. I do have a hibachi place in Indy that cooks it like I want it.

A lot can cook them correctly but it's the servers being slow that fuck it up.  They put them on hot plates so the steak continues cooking and if the servers aren't fast the steak can continue cooking another 5 to 10 degrees just sitting there. 

Places like Craft Steak at MGM have a lot of staff and made the most perfect medium rare I ever had.

this happened once with another chick.  We went to the Chop house in Chicago.  Both ordered a filet.  Hers was a perfect specimen of a steak.  Mine looked like it got slammed in a door hinge. Normally I would have sent it back making a fuss, but I was on good behavior for the date.   I'm stuck eating around the chunks of fat meanwhile hers is pure meaty goodness.  She has 3 bites and says she's so full.  I grabbed hers and ate the rest.
