If making the biscuits, really try to get a Southern Flour (soft winter wheat) like White Lily, Martha White, Southern Biscuit.  I use Snowflake Flour.  Just make sure its all-purpose with no baking powders added.  You can use other flours, but for best results a southern flour made from soft winter wheat will yield the best results.

NOOOOO.  Do not use Olive Oil as it has a low smoke point.  Don`t be afraid of deep frying anything.  Very little oil gets absorbed.   The oil that gets absorbed into fried foods happens within the first few seconds after it is removed from the oil, not while it's inside the hot oil.  When removed, the steam condenses and oil fills the void as the temperature of the food drops.  If you fry at a correct and constant temperature, start with a dry chicken (dry it before battering and frying with a paper towel) and fry at the correct temperature, little to no oil is absorbed.

I did a test myself a few times where I weighed the oil in grams pre cooking and post cooking after frying a chicken and there was little variation, meaning fried foods are not inherently fatty just because they are deep fried.  If properly done, it can be as low fat method as any other cooking method, moreso than pan frying where a piece of meat just sits in oil or half sits in oil with a varying temperature gradient which would allow oil to replace the steam pockets created.

I only use olive oil for pan frying salmon.  The best oil in my opinion for deeo frying chicken or catfish is peanut oil or if available some lard.

This! I have spent over $350 on a meal for 2 and less than $20 for Fried Chicken! Love that Popeyes!
