The numbers game. You and your woman have the conversation. How many people have you slept with? (Sex not BJs). Obviously age plays into this. For shits and grins lets say you're both 30.
My policy is I don't want to know because I'll never be satisfied with the number or I'll think she's lying.
Assuming she does drop her number on you. How many is too many for you or does it matter at all?
I once read a good book about Malcolm X, in which Malcolm stated that you should:

Never ask a woman about other men. Either she'll tell you a lie and you still won't know, or she tells you the truth you might note have wanted to hear it in the first place."
I think that adage is true of all relationships. Never explore your partner's past, because in doing so, you will attribute any feelings/emotions of present day to their past actions. By doing so, you inevitably adopt the anger and/or jealousy that their present behavior/actions do not warrant.
In other words, your present feelings for them will spill to their mistakes/actions of the past and you will judge them not by their present day merit, but by their past mistakes/actions.

P.S. Regarding whether or not the number should matter at all, think about the potential for STD's. There are many STD's for which condoms are ineffective against.
