Almost everyone I know has a dream somewhere in the back of their mind of opening a restaurant. I'm no exception, but it is obvious that operating a successful restaurant is one of the most stressful, grueling jobs there is.
There's a restaurant in NYC that fascinates me. It's a dumpling place on 14th street that is always crowded. I used to eat there when I was in college all the time and have rediscovered it in the last few weeks.
It is dirt cheap and the food is pretty good for the price. It has a sparse menu and is incredibly efficient. Most of the time you can get your order within five minutes, but people will eagerly wait up to 20 minutes for takeout when it's EXTREMELY busy.
That's my dream scenario for a restaurant: a sparse, inexpensive menu done really well with a good word-of-mouth reputation. If I was going to open a restaurant today, I'd probably do a dumpling/noodle shop with 3 types of dumplings and a few different toppings for noodles.
