I'm sure I'm wrong (again) but it seems to me that the 'gritty' look came about in the early '90s with the increasing use of GH...  So rightly or wrongly (OK, wrongly), whenever I see a pic of one of these guys looking like sandpaper I tend to make the assumption they're on a shoot-load of C39H60N8O13...

Do you think his though could be down to gyno surgery? My pecs look somewhat similar after I had mine done.
