cooking with red wine

is it ok to use redwine when baking fish or other meat when wanting to lean out?

I do, I know a few BB's that love to cook with wine.  The alcohol burns off anyway.

You will be fine.  The alcohol evaporates and all that is left is the flavor of the wine.  Same thing if you marinate with wine.  This holds true for all alchol/liquor.  The only time you need to worry about it is when you have high gravity liquors as they contain larger amounts of sugars.  By high gravity, i mean the weight of the liquor/sugar content.  It's different than the term high gravity when talking about beer.
