I'd say it social as much as dietary. The elderly are in general much better taken care of there, family stick around and they feel valued.Most elderly elsewhere are depressed and lonely as fuck.
A diet of fish, rice, sprouts and bamboo shoots plus a low stress agricultural life for the Okinawans who I think you are talking about. The mainland Japanese have a lot of stress with long work hours in busy urban, stressful environments with a more western diet and don't live as long.
