2000 cals per day is not a lot. Do you have a typical meal breakdown? What's for breakfast? 5 x 400 cals per meal would get you there. But it is really easy to eat more than 400 cals. per sitting. If you went with full fat ice cream you would easily get to 2000 cals and have to starve the rest of the day or do more cardio to compensate.
I burn about 400-500 calories in a 30 minute cardio session. If you are doing the same plus more with your weight training I can see how 2000 calories per day would lead to dramatic weight loss. You are probably burning 2000 cals per day just walking around and sleeping.
My routine is as follows...
I get up everyday at 430 am and go work out, I do so on an empty stomach (I know blasphemy) and drink NO Xplode during my work out.
Meal 1 (Post Work out) (280 calories)
2 scoops protein shake
5 g creatine
Meal 2 10:30 am (260 calories)
1 RTD protein shake
2 caramel rice cakes
Meal 3 12:30 pm (475 calories)
4 oz chicken breast
3 Cheddar rice cakes
3 caramel rice cakes
I also mix benefiber with my diet soda
Meal 4 4:30 pm (280 calories)
2 scoops protein shake
Meal 5 7:00 pm (730 calories)
3.5 oz chicken breast
Veggie made pasta (made from zucchini) with marinara sauce
Broccoli
Halo top ice cream
This is my typical diet during the week... just easier to manage on work days and in the office and stuff. On weekends the die can be quite different but within the same caloric constraints. I'm pretty deligent about weighing my food - even the ice cream lol

I'm doing a weight cut too. I myself was 213-lb [nothing like BIG ACH's conditioning], and dropped to 180-lb using starvation intermittent fasting. I want to see how close to 160-lb I can get before I cleanly bulk back up to 175-lb.
Beyond 185-lb, all the weight goes to my waist. I also fear for my health at heavier weights.
