My favorite Priest records are the 1st two I ever bought as a kid, Hell Bent for Leather, Unleashed in the East.
British Steel, Screaming for Vengeance, also amazing. The early ones are crazy good as well (Stained Class, Sin After Sin, Sad Wings, etc).
They continue to make heavy stuff even today, even without Ken Downing, and Tipton has Mike J. Fox disease, so they have their friend fill in.
