Did some digging. Sounds like a nasty situation. Tom appears to have been on the crazy side...

Besides his outbursts it looks like he stole over 100k from Grip Genie to pay for his gambling debt.

Yeah he had a gambling addiction and stole from Jon and Erin, which is why Tom is gone.
