Yeah I had a similar experience at what I believe was an Ethiopian restaurant.  I suppose they hadn't had much experience of things like 'ingredients' before...

I was born in Athens Texas.They claim to be the black eyed pea capital of the world and up until a few years ago they held the black eyed pea jamboree every year if you can imagine such a thing.

I grew up eating the blandest food you could imagine.

The only spices we had in the house were salt and pepper.

Now i mainly eat spicy food. But overall i just want something with flavor. I dated an executive chef and she showed me how easy it is to cook amazing things.

Love some real authentic Mexican, Thai, Italian, Viet, Japanese, Lebanese and overall Mediterranean.

I put peppers, onions and garlic in almost everything. I make a chicken stir fry that will melt your stomach it's so spicy.

Damn i'm hungry now.

No, soul food is really  slave food. Slaves were feed pig parts like chitlins and cornmeal because crackers were some cheap motherfuckers back then.   To supplement the diet...thats where collard greens come from as they grow naturally in the woods, in addition to dandelions and leeks.  Slaves also had gardens so they would grow beans and potatoes as they were durable and made a hearty meal with the pig guts that honky's fed them

Now as far as fried chicken and why its so prized....well the s mayos obviously didnt give them chickens regularly  as they were expensive so they would be presented as a holiday gift or if the chicken was no longer laying eggs.  But also if they werent getting fed enough, it would be stolen from the barns in the middle of the night.

 Yes. Historically only white people had clean, quality food. Rotten or foul tasting food would be thrown to the slaves and peasants, so those classes became more talented at using spices to cover up the low quality of food.

It's true today as you'll see some rapper or other anomaly to the Capitalist structure enter the financial upper class and ask for ketchup or hot sauce for an elite cut of meat at an exclusive restaurant as the wealthy, educated white patrons at other tables snicker at the fool.

Extensive spices are only needed for poor quality food.

mine (great grandparents) came from italy, worked 3 factory jobs to raise family
saved up enough to open his own store eventually (great grandfather)

     Lobster price is a scam in some instances. Just like certain luxury cars, artwork, wine, and other wealthy privileges.  It's designed to dupe lottery winners, rappers and other newly rich fools. Granted, some lobster is very high quality, just like certain beef(Argentine or Wagyu beef), but 99% of people just see the most expensive lobster dish and have no clue what they are ordering. Myself included.

     I come from the bodybuilding diet and like most on this board ate for function. Fine cuisine is not a traditional getbig topic. We should have a thread about the shittiest diet one has eaten for bodybuilding purposes. Like those old school tuna and water cutting diets. Holy fuck, ever down a can of chunk light tuna? Whole? Or drinking egg whites and shit?
     Bodybuilders were not meant to be wealthy. They can't appreciate it. Look at all the bodybuilding fools that put stupid rims, gaudy paint jobs and ghetto sound systems on their Bentley's or other fine, luxury automobiles,  DRASTICALLY reducing the value.

I read that too. And oysters.

I like spices on my foods, but it doesn't have to be "spicy." Indian, Thai etc. are all good if done properly and doesn't have to be so hot it burns your mouth.

Thats not true neither...salt and pepper were serious commodities as they preserved and covered up spoiled food.  It was very rare to have fresh meat as there was no refrigeration except in Africa ...mainly Egypt.  Thats why Marco Polo and Columbus went sailing....to get spices.

Its also the reason why most colonial recipe books have mostly stews and soups.

The value of spices historically has always been for spoiled meat. But those days are over. We are talking about modern history, meaning late 19th century on. There was no high quality cuisine in ancient eras, for the reasons you mentioned(refrigeration, sanitation,etc).

A wealthy kings castle in ancient civilization was a nasty, foul cesspool.
