My daily carbs are bout 425 so I think 700-800 will be enough

Since you are self aware of the situation, I would think that would help you recognize and control the situation.

Doesn't feel like teaching the way to go, but you should be able to figure out a gig where you're solo most of the time.  Sounds like you need a more manual labor type engagement to keep you busy.
