The problem with mail in ballots is you don't actually know who filled it out and sent it.

There are four registered voters in our household, all of which are Democrats. None of us fills out another voters ballot. None of us would bother trying to copy one another's signature, besides what would be the point? My wife passed away 15 years ago. No ballots have been mailed to her since her passing.

Each ballot is sent with a return envelope that contains a unique identifier and a space for the voter's signature.
When the ballot is returned, election workers scan the envelope's barcode to match it to the voter's registration. The signature is then compared with the one(s) stored in the voter registration record.
While election workers are trained to spot specific characteristics in signatures, some counties also use software to aid the verification process. A voter's signature may change over time, and election workers are trained to account for these natural variations.
Once a signature is verified, the ballot is separated from its envelope to preserve the voter's anonymity. Only after verification is the ballot prepared for tabulation.
