Title: anybody order sushi fish (tuna or salmon) online???
Post by: ESFitness on January 26, 2014, 02:34:25 PM
I was looking around for a 'sushi forum', but have no luck, so figured I'd ask here.

anybody order 'fresh' fish online?

cheapest I've found is $35/lb of yellowtail, and salmon is about $25.... that's delivered price and at 4lbs a week, I'm not really saving all that much money over buying my sushi. (think I've spent $2k the past two months on sushi  :-\ )

I'm not exactly close to the beach now, so my selection of grade A ('sushi grade') fish isn't always great. I have a source for yellowtail at $18/lb, but the cuts are ok for rolls, but not always great for Nigiri.

and... the places I've found online only have yellowtail... I want Bluefin (maguro)

I never understood the people who love sushi. I have never tried it, and never want to.

Its raw fish. You want fresh sushi? Take a cue from the grizzly bear. Just catch that bitch and take a nice big bite out of it on the spot.  ::)

I used to think it was some elitist hipster BS as well, but then I tried it and realized what I was missing out on.

I hate hyping up sushi any time someone else talks about it, but it's truly legit.

You guys ever noticed how most people eat sushy in rolls?

Thats because all of the other ingredients make it taste more edible.

I dont see too many people eating raw tuna filets.

Yes they do. Sashimi is actually the best in most people's minds, but it's extremely expensive. Westerners like the "fusion sushi" versus the traditional stuff. But I like it all. I always get a big plate of sashimi as well. Just a little soy sauce and wasabi and it's to die for.

I could literally eat nothing but sushi for the rest of my life and never complain.

I only order steak blue rare or rare.

They have A LOT more flavor than a well done steak in my opinion.

I have had a bite of raw steak like that.....I thought it was delicious.

However I've never had a whole raw steak.

Deep fry that shit.

I do.

I make deep fried CA rolls (crab, cream cheese, avocado) and serve with eel sauce.

I make a baked shrimp crunchy roll and serve with spicy mayo.

sometimes i'll do a deep fried philly roll... not often, the cream cheese gets too soft and loses some texture.. I'd have to mix with crab, but then it wouldn't be a philly roll. lol.

i'll do a "CA egg roll".. it's like a CA roll, but made like an egg roll, and deep fried.. with spicy mayo and eel sauce.

about 70% of the sushi I eat at home is Nigiri.. just fish and rice. it's fast and easy... usually Yellowtail (although I want bluefin, I just don't have a regular source), sometimes Salmon. but the salmon has gotta be fresh.. by fresh, I mean it's already been flash frozen and grade A/sushi grade. salmon has the highest incidence of parasites/infection/ect... (thank the Norwegians for introducing the sushi-world to salmon, before them, it wasn't used)

Find a guy who fishes and just buy the fish off him and butcher it yourself

If your worried about parasites eat the ginger that's served with it. I asked a chef I developed a good repore with why they garnish sushi with ginger. He whispered that it kills the bacteria in the fish. Prob whispered cause most people don't realize eating raw fish has bacteria and he didn't want anyone to hear

I've heard the same about wasabi killing the bacteria. that was the reason back in the day when sushi was 'developed' (lack of a better word?).. it was cheap and easy street food for workers (kinda how 'hoagie' or 'submarine' sandwiches were 'developed' for the USS Hoag in a dock in Baltimore.. cheap and easy food to feed workers), but the fish wouldn't always be fresh so they used wasabi to kill bacteria and stuff, not for flavor.

I dunno if either are true. lol. but I don't ever eat the ginger (pickled ginger).

I think the real old school sushi they used fermented fish and the rice was used more as a container than anything and they'd toss that shit before eating it. People started changing things up, putting vinegar in with the rice and other veggies and dried preserves like nori (seaweed), etc. Over time it continued to evolve into what we know now.

I don't know if the wasabi is really enough to kill bacteria considering how you don't smother it with wasabi, but it's good shit nonetheless. Pickled ginger is good too. I'm amazed that you don't like it. It really cleanses the palate and opens up your nasal passage. I usually eat a solid metric fuckload of ginger along with my sushi. I've got jars of it in the fridge and if I've got a stuffed nose I'll just eat something Asian tasting and eat a few bites of ginger along with it. I cook with a lot of ginger too. It's unbelievably healthy and goes well with tons of different meats and veggies. I like Szechuan green beans with a little ginger and sesame oil. Always impresses the fuck out of dinner guests but is so simple a retard can make it. Very healthy, only fibrous carbs and kills the munchies.

I never understood the people who love sushi. I have never tried it, and never want to.

Its raw fish. You want fresh sushi? Take a cue from the grizzly bear. Just catch that bitch and take a nice big bite out of it on the spot.  ::)

Many people don't realize that in the USA it is illegal to serve raw fish without deep freezing it first to kill surface bacteria.  There is no such thing as true fresh sushi. everything has been portioned and frozen to death , thawed out before serving.

As you may have guessed, I am an avid freshwater fisherman myself.

The fishing is very poor in Sudan though bro, if you go take plenty of condoms to pass the time.

steel head?  I fish the rivers around Erie. Great fishing coming up. Where'd u get those?

Alaskan Silver Salmon, the most delicious salmon around. Caught it about 20 miles offshore in Prince William Sound, Alaska. This catch lasted me about 4 weeks, I couldn't ration it, it's too delicious  :(

When I was in the biz just a few years back I sold lots of trucks to the L.A. fish market. Yes the fish they brought in was flash frozen (law or not I don't know) on the ships at sea then flown to L.A. airport to pick up for the local market/restaurant distribution.

The best sushi I ever ate was a small tuna I caught of the Keys. We filleted it on the deck and ate it on the spot. Also grilled some in the galley and made fresh fish tacos with shredded cabbage, salsa and lime.

Mmm sounds good.

You can eat fresh fish without flash freezing it, especially if it's fresh from the ocean and you fillet it right away. I've never had any concerns. But you'd want to flash freeze anything else. I've eaten freshly caught and filleted fish and it's awesome.

Dude, I swear people dont know what FRESH FISH is until they've caught and fillet'd  it themselves! Silvers should be a bright vibrant orangey-red.

Any time you're eating sushi and you get fish that looks kinda dull colored, dried out, no moisture, etc.....its old fish you're eating.

My friends dad use to catch and make fresh fish. It was so delicious, even blue gill tasted so good.

You might find a source on Chowhound.  A lot of restaurant chefs post there.  Join and ask.  http://chowhound.chow.com/boards

would you consider eating a raw steak?
yes.

I eat black and blue (seared for a few seconds to kill the baxteria amd served) steaks all the time. If I could eat the steak completely raw and not die, I would.
