Joe White Chicken Chili!

Thought I'd share this recipe that's super quick & easy, packed with protein, high in fiber, and "fairly" low in carbs...

1.25 lbs of Chicken Breasts - cut into small pieces
1 can of Ro-Tel Extra Hot Tomatoes
1 packet of McCormick's White Chicken Chili Mix
1 can of Navy Beans
1 cup of water

You can either grill the chicken before you cut it up, or cut it up and cook it on the stove in a pan with a tiny bit of Olive Oil.  Once cooked, throw in a pot with the tomatoes (undrained), beans (undrained), chili mix & water.  Stir up and bring to boil.  Reduce heat and simmer for 10 minutes.

Add Frank's RedHot or Tobasco sauce to taste (I use a buttload of RedHot and a dash of Tabasco).

Makes 3 good sized servings, or 2 monster servings.

Thanks.  I'll give it a try.  Chilli is one of the most underrated bodybuilding foods IMO.  Done right, it has all of the nutrients your body needs.

Nice quick chili but I've got a better home made recipe for white chicken chili.

Ok, let's see it-

I kind of just wing it when I make it. However, I've brought it into work a couple times so everyone's asking for the recipe. I'll make it next week & post it here (writing down everything I do).
