Your Creative Use of Leftovers

Today I made a sammich using a toasted "light" English muffin (100 cals - 8gm fiber), leftover turkey breast, roasted red pepper hummus, honey mustard and leftover roasted sweet potato (very spreadable).  It was quite tasty!  ;D

Tonight, I think I'm going to make a version of eggplant Parmesan with leftover turkey in the bottom of the baking dish.

one obvious one for me is making turkey stock with the left over bones and carcass meat.  I will use that to make soup, or to make  rice.  One thing i love is to make turkey croquettes with the left over meat.
