Who likes beets?

I've always been disgusted by them (dirt aroma) but I ate a little tasting plate of some last week and they tasted odd but good.  They had a vinagrette and blobs of goat cheese. 


Migs, got any recipes for beet virgins?

I like them.  I don't go out of my way to eat them, but I like them.

I tried juicing them with some other stuff once and it was the most vile thing ever  :-X

i'm not a beet fan.  But I do ocasionally roast red, purple and yellow beets, slice them and stack them like a napolean using a ring mold with goat cheese layered inbetween the different layers.  I then make a small mesculine salad with a vinaigrette dressing.  I'll also drizzle the dressing over the beets.
