The Great Pumpkin

Had an urge to make pumpkin seeds, so I picked up a good sized pumpkin (learning later that smaller ones yield better/more seeds  ::) )  Rather than wasting the pumpkin, I baked it until soft and then pureed it in the food processor.  It made a ton.  With the canned pumpkin shortage (still), the dogs have been missing their daily dollop.  We're set for awhile now  :D  They even like the raw pumpkin.

The seeds turned out ok.  I think my cravings are over for at least another year  ::)

The dogs carved their own pumpkins this year!  They were going to roast the seeds but were too lazy ::)

why roast pumpkin seeds?

they are tasty.  Especilly with a touch of salt

Really?  There's been a nationwide shortage since ... I dunno... April?  The stores just recently got shipments, but they flew off the shelves.

You've never had roasted pumpkin seeds  :o  They're very nutritious.  I sprinkled Cajun seasoning on them before roasting.  Tasty

Yes, you eat the entire seed.  IMO they're only good if they're really crispy.

The puree comes out like baby food, which can be used in all sorts of recipes.  I don't like pumpkin anything, but the dogs love it and it's really good for them.

i love pumpkin.  No noticeable shortage.  I also go to a retaurant supply place so that may have something to do with it.
