Hard boiled eggs

Do you place them in the water, and then bring to a boils, or do you drop them in the boiling water?

I poke a whole in the flat end of the egg and drop them in boiling water for 8-10 minutes. If you like them softer do less. Add a big of salt to the water. It's hard for me to stomach them for some reason. I end up getting a stomach ache after 3-4. Chop them up put them in a sald or something.

Start with COLD water & slowly bring to temp.  Do not boil - simmer only
11 min - remove from heat - run under cool water.

or

Start with COLD water & slowly bring to boiling point.
Remove from heat - cover for 15 min

All the pros have their "secret".
Both methods work fine.
Bring to boil too quickly and they'll crack and ooze.

I also find them easier to peel if started in cold water - If I just drop them in some near boiling water and hard boil them quickly, they never seem to peel well.  But I always find the modern eggs inconsistent - it is obvious the effect the battery farming has on these eggs as opposed to when I purchase the Eggs from farmers market etc - Anyway, I loved Boiled Eggs - Hard and Soft and yolk and all - I love to slice with egg and make curried egg & lettuce sandwiches.  HHHMMMM,  I am going to have eggs today!  Gotta love the Humble Egg!

People were getting me and G-Thang confused. Since I was Parker since 2003, people got used to it...

**Make sure membrane on both ends is broken, otherwise the trick won't work.
Using this trick, I can peel off the virtually the whole egg shell leaving a egg shaped wrap, sometimes even pushing one end out.

When you are finished cooking them drop them into a bowl of water with ice. You will thank me when you see how it makes it easier to peel.
