Because he’s a hack. He purposely gets batshit crazy people to come on his show, so he always looks like the “winner” and the sane one.
But, when challenged by someone who seems calm and collected, he melts down like a child.
He gets some insane guests just for entertainment purposes and more hits, but the majority of the guests are pretty solid and come from all across the political spectrum. He's also willing to challenge the mainstream/accepted narrative on important issues.
His meltdowns are childish/unprofessional and he should avoid getting to aggressive with the guests (like he did with Avenatti) but overall, he's still by far the best anchor on TV.
