You are of course free to continue eating processed food garbage and lots of carbs and get fat and have Type 2 diabetes.
I don't think the Gary Taubes insulin model of obesity is scientific. Eating carbs obviously doesn't necessarily mean you get fat nor insulin resistant, not saying you claim this either, but you still might be slightly carb-phobic

From what I can tell Type II diabetes has a bit more complex etiology than carb or sugar consumption per se. Protein causes insulin resistance too if you look at cellular mechanisms in studies, particularly the branched chain amino acids, which does not mean
you in particular will get resistant if you eat plenty of protein. Context dependent obviously. I'm using some Toujeo basal low dose insulin at the moment for very theoretical reasons; paradoxically it's been shown in certain situations that it can even lower insulin resistance.
