If by "chang[ing] the person you are" you mean changing one's beliefs and/or thought processes and if mental states are determined (in some sense to be, well, determined) by brain states, then a person who significantly alters the bath of sensory input they dip their brain in is liable to change as a person. How much of such change can occur in the limit is an empirical question, that it occurs is an empirical fact.

Leaving the nitty gritty scientific details aside, most people know other people who have changed significantly as a result of experience(s), and a common experience leading to such change is travel/living somewhere new.
