Just prepared and ate a great meal.

I have been bitten by the cooking bug lately, and tonight had a great meal. It was pan seared chicken, roasted broccoli, boiled potatoes with a Huancaína sauce. The sauce was key. Once made, you drizzle it over the potatoes for a bit of added kick.

Start with two chicken breasts, broccoli florets, potatoes, a lime, garlic clove, jalepeño pepper, cream cheese, chives and simple spices like salt and pepper. Olive oil is a key ingredient as well.

Throw the potatoes in the pot with a pinch of salt, and bring to a boil and boil for 25 minutes or so. Concurrent to this, have your broccoli in the oven at 400 for 25 minutes drizzled with olive oil, salt and pepper.

Heat a pan with olive oil to medium high for the chicken breast. When you get to about 15 minutes left on the veggies, salt and pepper the chicken breast and cook each side about six minutes.

Now for the good part, the sauce. Mince the garlic, chives, and jalepeño. Add a tablespoon of olive oil and smash into a paste with the knife.  Zest the lime then slice in half. Throw all of this in a bowl with the lime zest then squeeze the lime into the bowl. Throw in a tablespoon of water, and about four tablespoons of cream cheese. Mix it all until it is a bit runny like melted ice cream.

Once the chicken is done, slice thin, and plate. By this time the veggies are done. Slice the potatoes, drizzle with the sauce and plate them with the chicken and the broccoli.

I got the recipe off the internet, but preparing and eating it are the best part. You'll thank me later. Happy cooking.

i cooked this with a couscous and quinoa salad



This is an ideal chicken dish for an outdoor summer party. I favour cooking it in the oven because the marinade is apt to burn on a barbecue. Sumac is Turkey’s favourite spice. It’s a red berry with an astringent, lemony flavour, the fruit of a small bush. This dish is ideal as part of a warm and cold buffet where people have a bit of everything including a rice pilaf.
Ingredients

        1 whole chicken, about 2kg/4lb 8oz, jointed into 8 pieces

        3 tbsp olive oil

        1 tbsp sesame seeds

For the marinade

        2 tbsp ground sumac

        2 large garlic cloves, crushed or grated

        ½ -1 tsp chilli flakes

        1 tbsp tomato purée

        1 tbsp pomegranate molasses

        1 tsp salt

Preparation method

    Mix all the marinade ingredients together, rub well into the chicken and leave in the fridge for 1 hour.

    Preheat the oven to 200C/180C Fan/Gas 6.

    Put the chicken in a roasting tin, drizzle with the olive oil and scatter the sesame seeds over. Roast in the oven for 30 minutes or until cooked through. (To check the chicken is cooked, pierce at the thickest part of the thigh - the juices should run clear.)

Too many carbs.  Everything tastes good with cream cheese.  Also where is the bacon?

 I tried this whole chicken recipe from poliquin's site recently. made it acouple time already, turns the chicken out nice and moist, especially breast.

1 whole  chicken
1 whole lemon
salt and pepper

preheat oven to 475
chicken in pan of choice I place foil at bottom of pan and pat some olive or grapeseed oil on the foil to keep chicken from sticking
sprinkle salt and/or pepper(or other seasoning) to outside of chicken
take fork, poke lemon holes in lemon all over
violate chicken with lemon ie stick it in the cavity
Drop oven down to 375
cook chicken on lower-mid rack in pan for 1 hour 20 minutes

remove lemon from chicken's ass, serve with whatever the fuck you want, I just seperate the whole thing, then remove the meat and make salads, stirfries pita etc with it

drop oven down to 450

I prefer to spatchcock my chicken as I feel it cooks more evenly and the whole bird comes out moist and tender. I roast it in a big pan with potatoes, carrots, etc.
