I have been bitten by the cooking bug lately, and tonight had a great meal. It was pan seared chicken, roasted broccoli, boiled potatoes with a Huancaína sauce. The sauce was key. Once made, you drizzle it over the potatoes for a bit of added kick.
Start with two chicken breasts, broccoli florets, potatoes, a lime, garlic clove, jalepeño pepper, cream cheese, chives and simple spices like salt and pepper. Olive oil is a key ingredient as well.
Throw the potatoes in the pot with a pinch of salt, and bring to a boil and boil for 25 minutes or so. Concurrent to this, have your broccoli in the oven at 400 for 25 minutes drizzled with olive oil, salt and pepper.
Heat a pan with olive oil to medium high for the chicken breast. When you get to about 15 minutes left on the veggies, salt and pepper the chicken breast and cook each side about six minutes.
Now for the good part, the sauce. Mince the garlic, chives, and jalepeño. Add a tablespoon of olive oil and smash into a paste with the knife. Zest the lime then slice in half. Throw all of this in a bowl with the lime zest then squeeze the lime into the bowl. Throw in a tablespoon of water, and about four tablespoons of cream cheese. Mix it all until it is a bit runny like melted ice cream.
Once the chicken is done, slice thin, and plate. By this time the veggies are done. Slice the potatoes, drizzle with the sauce and plate them with the chicken and the broccoli.
