You can go back to the normal routine, or use some slight variations the first few workouts for a "softer" landing AKA less soreness. For example, do less sets the first workouts, and/or don't go as intensely on the sets, take it a little easier, etc.

depends where you were. if you were full health busting your balls in the gym and then got sick for a week your strength might not be the same so it'll take a little while to get back at where you was

Did not say what your sickness was...virus, infection,  injury, etc. Can make quite a difference. Might consider taking another week away from training to insure complete recovery and than begin more renewed than ever.

  But that's your choice, feeling better does not always mean your body is ready for training.  If deciding to return in just a week, than start with 2 sets of a higher rep range, like 10 to 12 reps. Keeping it more strict and with lighter weights. And do not even think of going any where near failure. That first week back should tell you quite a bit about how your body is responding. After that, begin training with serious intent again. Your program looks excellent.The  5X5's whole body thing have put on a lot of muscle, for a lot of men, over the years. Good Luck.

you're such a drama queen, go back to what you did before, it is possible you will have to lower the weight a little bit, depending on how sick you'd been, but you will know/feel it as soon as you hit the gym.
