However, what about insulin resistance in the more obsese individuals? We both know that the fatter the more resistant they are. Wouldn't be better to eliminate processed food at the begining to avoid insulin spikes an further the resistance and storage tendencies?

Define Processed food.  Anything canned is processed.  Anything Frozen is Processed.  Anything with fortified vitamins are processed.  Anything with salt is processed. 

Processed is a dumb term, understood by few. 

Insulin production directly related to energy intake.  It is impossible to have high Insulin levels with low calories. 

Furthermore, The GI index is looked down upon as useless by the American Diabetic Association as well as the American Medical Association.

It is impossible to store fat in a caloric deficit.  It is also impossible to get a high insulin spike with low calories.

More precisely processed sugars with bad Glycemic indexes. Anybody can squeeze 4-6 cokes in a low calorie diets. However each intake will cause a dramtic insulin spike, which is not good regardless of the calorie intake. Also cleary stated as "avoids" by the American Diabetic Association

1 Banana
1 Caribou Coffee Mint Bar

1 Ostrich Burger

1 serving Seattle Chocolate
1 Rice Krispy/Marshmallow treat

Anything over 2000 calories or so, plus or minus 300.

You may be in a caloric deficit, but I think even more vegetables would be a good addition.  Also, to stay in a caloric deficit, you must be quite active.  That looks like alot of calories.

Most are all show no go!
