raw veggies
« on: July 28, 2008, 08:00:07 PM »
i buy veggies (broccoli, cauliflower, and carrots) and keep them in the fridge,  they seem to start turning a bit brown after just 3 days.  How can I keep them fresh for a few more days?

keep them in the produce compartment in the bottom of your fridge and keep your fridge colder.

Also you can cook them and place them in plastic containers, if  you are going to eat them within a day or two.

I think what we're trying to say here is Bast needs to man the fuck up and try figuring out how to keep veggies fresh himself instead of using getbig.com as a perpetual crutch for his existence

What is the difference between frozen and raw veggies? Isn't it the cooking the removes some of the nutrition?

Frozen veggies are just as good as fresh. They are frozen while fresh and retain their vitamins. It's all in how you prepare the veggies after thawing that determines their nutrient content.

I'm pretty sure that cooking them, to an extent, actually increases the absorption of nutrients.

if you cook stuff like squash and zuccini in a pan on the stove does that remove nutrients?

Here:
http://www.sciencedaily.com/releases/2007/12/071224125524.htm

In a finding that defies conventional culinary wisdom, researchers in Italy report that cooking vegetables can preserve or even boost their nutritional value in comparison to their raw counterparts, depending on the cooking method used.

I think as long as you don't fry them you're in good shape.

Vegetables are meaningless for any competitive athlete. They're filler... nothing more. If you're a fat slob trying to "diet" vegetables can help.

A few things Bast.

1. Your vegetables don`t seem very fresh as they should keep longer.
2. IF they are fresh, then your refrigerator needs to be turned to a cooler setting.  There should be a temperature dial.
3. IF that still doesn`t work, buy some limes and squeeze lime juice on your vegetables before putting them in the fridge.  This will stop oxidization.
4. You have the right approach in using fresh Vegetables.  Keep it up.  People are getting ripped off by buying frozen since you are paying for packaging and brand names.  Try to find a Farmers Market.  I can find one in your area if you like.

Totally wrong and ignorant for too many reasons to list, disease prevention being the largest.

Dr. Duke's Farmacy, the online phytochemical and ethnobotanical database provides much insight into the chemical profile of thousands of different edible plants(including fruits and vegetables).

One of the least known but most fundamental principles of healthy eating, and it's brought out in the database, is that phytochemicals, the chemicals in plants that help our bodies, form part of a synergy when they are absorbed by the body. Which means they WORK TOGETHER to aid our body in infinite ways. This means that we cannot simply take supplements, because they DO NOT WORK to their full capacity WITHOUT THEIR COMPLEMENTARY CHEMICALS. It also means that the object of healthy eating is NOT the most antioxidant capacity, but the widest possible variety of healthy foods to complete the synergy of phytochemicals.

One final note, take a look at Dr. Duke's Database. You will notice some remarkable things in there. Antioxidant and antiinflammatory properties are just the tip of the Iceberg. There are literally hundreds of activities and superactivities just waiting to be uncovered.

p.s. Dr James A Duke is a 30 year veteran with the USDA and has authored 29 books on ethnobotany and botanopharmacology.
