All baked goods contain water, so the temp never gets over 100C (212F) except on the skin of the bread.

If you don't burn the oil, it's fine to cook with IMO.

I BBQ.  No need for oils or any other shit.

Where does this myth keep coming from?

It basically becomes the reciprocal. Goes from real good to real bad if it's heated too high. I'm pretty careful when I cook with it.

Too high would be beyond what the majority of us would do normally.  I don't think anyone here is talking about deep frying french fries.
