IIRC, it is the process in which they filter the protein, fat, and lactose to get the isolate. Kind of like 3 diferent grades of gas at the filling station.

Like Jason said it's the filtration process used to isolate.  Research into the processes if you really want to... some have strong feelings about which allows the least denaturing of subfractions. Honestly I like ion exchange because it tastes good and is high protein, that's why I drink it lol. Cold filtration was fine but had a slight taste to it while the ion was more "pure", have not tried micro or cross flow filtration.

I honestly do, I like a real pure taste for fruit flavored proteins otherwise they don't do it for me. Vanilla and chocolate type flavors don't really matter but there is a difference in say fruit punch. 

I will take the nastiest crap supp wise, CEE, GTE powders, Cissus etc but I'm a sissy when it comes to proteins lol
