Good points, really good explanation... but plain rice has fiber, vitamins (B group...), has much slower insuline release than "white" rice, and provides aminos that, in combination with lentils, makes a very good aminograme. Of course, no "white" rice. Anyway I take it in very small amounts, boiled in combination with legums. Do you think that way is also wrong? Anyway I prefer much more potatoes as they are not acidic, or carrot or peas, better choices?
carrots and peas are good healthy foods.
plain rice does have one or two grams of fiber per 30 grams of carbohydrate. that is not a good source of fiber. think of this... would one or two grams of protein for 15 grams of fat make a food a good source of protein? (think cheese)... no.... a good source of fiber is something like a vegetable, which is MAINLY fiber..
and plain rice does have a bit of b vitamins, but a small amount, and b-vitamin absorbtion is limited anyway. same as with fiber, just because a fod has a small amount of vitmain, doesnt make it a good source of vitmains. foods that are a good source of viatmin are vegetables and fruits...they are abundant in them.
plain rice does have a few amino acids in it, but not a complete protein, and even if it was a complete protein...on or two or three grams of protein per 30 grams of carbohydrate.... not a good source of protien.
plain rice, with its one or two grams of fiber, and one or two grams of fat, technically is a bit lower on the glycemic load (less insulin) than white rice...but this effect is very small, and brown rice and white rice effect on insulin are very similar.
if you want to eat rice....white rice and brown rice are basically interchangeable... the difference is a few gram of fat, fiber, amino acid, small bit of b viatmin. as you outlined. but none of these adds any measurable effect to how it actually effects the body.
theres nothing horribly bad about eating rice, but if you want the MOST OPTIMAL diet for health...then you shouldnt include rice.
on a side note... i know your diet is low in protein... you may consider a whey protein supplement. whey protein is very healthy, has a very positive effect on the immune system, antioxidant support (by way of glutiathone), provides some anti cancer support...etc. it is also the highest quality protein source known.
