Lose the fat a little at a time... develop the "lifestyle"... don't worry about going from Blobby 310lbs of chewed up bubble gum to ripped and shredded O contender. 
Losing 1 lb. of fat and gaining 1lb. of solid muscle is quite the accomplishment for most folks here..
