I don't think this has been him changing things up a bit. He just didn't have enough time to get up to size.
He's been behind current pros all year and I think people are only starting to actually accept that. I have found it phenomenal to read posts about him, lately. I watch these MD vids where he barely looks like a pro in clothes (sure, he's getting ready for the show but is kai, phil, ramy, dennis wolf not going to look like a pro in clothes, even at contest weight? no) and these people are still delusionally thinking it's some trick of the camera angle or the fact he's very lean (like the rest of them).
He might have not had time to properly "size-up", but I do think he is coming to the Olympia with much better conditioning than he has ever had. He has never looked this lean, albeit in clothing.
I look at it as Jay is giving the bodybuilding world what it claims to want. A more shredded and balanced physique just like Zane, although not nearly as great or classic. In addition to that, he's playing the psyc game here by wearing a black long sleeved shirt. This makes him look much smaller than he is. The beard/stubble? There to hold back just how lean he is by virtue of hiding his face just enough.
As for Ramy, he's a pig. A big pig, but a pig all the same. And what's with everyone leaning to one side in those pictures? Is there a schmoe with dough on that side and the gravitational pull of the green is heavier?

I think you might be correct in that Jay is giving the fans what they always wanted, a more shredded and balanced physique. You're also correct in that his choice of clothing makes him look much slimmer than he actually is.
He might very well start carb-loading very soon and balloon up to the size which most would consider typical of Jay.
This should be an interesting Olympia!
