"insulin forces sugar into the muscle", ect... well, our bodies produce insulin naturally, along with chickens, right? well, why isn't there sugar in their meat?
wouldn't a chicken pumped full of insulin have nice sweet breasts? (haha)

There is sugar in the meat. It's just that glycogen is mainly water. 3-4ml per 1g of carbs. It's such a small amount.
Carb loading is important but you can still build muscle without it just fine. It's only a cosmetic thing. If you want to be full all the time with good pumps and vascularity then you need to keep glycogen stores full. Mine stay full with high volume heavy powerlifting training just eating carbs once a week. If it's not that important to look your best all the time then low carb is great, imo
