I made the most delicious Cinnamon-Sugar Scones with Lafayette Glaze the other day.  They had these layers of butter which I created from rolling and folding using a french technique which created a pillowy interior, yet the exterior had a nice crunch from the sugar and of course the glaze sealed everything in.
