if I see I flatten out too much, I'll take the whole sunday to "carb up" ( palumbo said that the cheat meal can't go above 500 gr of carbs). I don't think I can eat 500 gr of carbs in a meal so maybe I'd eat it trough the whole day and go back on the normal diet on monday

but vegetable should not be limited (given you're not having carrots,beans,corn) regular greens are pretty much limitless on this type of diet. the fibers help.
