Non-healthy, I get some collards from my garden and cook 'em with ham hocks and seasoning. Also, sweet potato with cinnamon butter. Or steamed artichoke dipped in lemon/butter sauce.
Otherwise, plain jane all the way for me. Sauteed spinach cooked in olive oil, fresh onions and garlic. All other vegetables I consume raw....bell peppers, radiches, carrots, rudabega, celery with natural peanut butter.
