cut them up, take skin and fat trimmings and bones and make stock from them. which means throw in some water, NO SALT, celery, onion, carrot, and into oven at 200 degrees for 4-6 hours, not boiling but just about
take breast, cut it up into strips, take a some coconut milk with water, green thai curry paste, fish sauce, if u want also some thai veggies like thai chillies, baby eggplant, thai basil, but these are not necessary. also put some of the chicken stock in so that the chicken is not dry but nice and rich, and boil the chicken in the water + coconut milk + green curry paste mixture. u can saute some onion and garlic before u boil things. at the end ad a tea spoon or two of fish sauce, and squeeze several limes into it. do not boil after for two long as flavors of lime and fish sauce will cook out.
second dish, take the thighs and legs and cut them up. take some onion and carmelize them... this means in butter and on LOWEST HEAT FLAME with lid on skillet for 15-20 minutes, now take egg plants cut up in cubes and mix them in, thro winw hatever else you want like mushrooms or garlic FUCK IT ITS A PARTY, put in some stock and them some crushed tomatoes, cook until the eggplants are nice and soft or almsot soft, throw in the chicken and cook till done
of course salt and pepper to taste BEFORE u put in the chicken, u dont want the water to pull the sodium out of the chicken and make it dry, make sure there is more sodium in the water than is naturally in the chicken
