They have had training they have different levels of accreditation required to recognize records they have actual accredited judges that travel to the meets. They don’t just pick random people out of the crowd that morning.

Sounds like serious business.  So you are saying they can be accredited to judge a lift, but if someone attempts a world record and they don't have that accreditation the lift wouldn't count?  Would the lifter be told that they cant attempt the world record because the judges don't have that level of accreditation?

Again not factually correct the morning of the show I weighed over 220lbs I carb loaded the night before and went to Shoneys for the buffet breakfast and had multiple plates of food. The adrenaline from the meet then travel and about an hour on the toilet and I woke up Sunday morning at 216. I was back to my normal 225lbs the following day. The last week I had a cold and not much appetite so I got a little light but on average I am 225lbs. I get a little heavier some evenings and a little lighter some mornings.
