The built-in Bosch speed oven is on the fritz. The door hinge broke. It will hopefully be fixed this afternoon. I'm surprised how much we depend on it. Last Saturday, I ordered a small microwave from Amazon which was delivered yesterday. As soon as I unboxed it and plugged it in my family started using it. It is interesting how easily we become dependent on equipment people got by without for centuries.
Last night I microwaved a casserole I make using 1 lb. lean ground sirloin cooked until all the pink is gone, one sweet onion chopped and sauteed until translucent, 1 can fire roasted tomatoes, 1 can pinto beans, 1 small can Ortega green chilies, 1 small can chopped black olives, 8oz or more water or beef stock, and one package of Zatarains Spanish rice. All of which is cooked in a large skillet until the rice is done (about 25 minutes). Makes about 5 good-sized servings. I freeze most of it. When I want something easy to fix for dinner, I'll put a container of it in the microwave for about 5 minutes and it is ready to eat. Sometimes I jazz it up with grated cheese, sour cream, and/or guacamole before serving.
