Maybe for the carb-addicted among us, you should post some starchy recipes. We both had problems letting go of the concept of eating bread and pasta, so some tips for that could be helpful. E.g. corn pasta, rice pasta products, etc.
And one of your favourites:
This sauce goes very well with Orgran's Chili Pasta Spirals.
Pasta with Spicy Chicken-Feta sauce- 300 g chicken in cubes
- 1 onion, chopped
- 2-4 garlic cloves, chopped
- 4-6 big tomatoes, diced
- 1 can tomato puree
- 250 ml water
- 1 tablespoon GF chicken broth powder (I use Sublimix)
- 1 teaspoon thyme
- 1 teaspoon oregano
- 1-5 teaspoons sambal (depends on how spicy you want)
- to taste: sugar, salt, spice
- 100 g feta, cubes
- some fresh parsley
Fry onion, chicken and garlic in some oil until done.
Add tomatoes and let simmer until all tomato pieces are 'melted'.
Add tomato puree, water and broth and let it simmer for another 15 minutes.
Add herbs, spices, and salt, pepper, sugar to taste.
Pour on all dente cooked GF pasta and garnish with feta and parsley.
